Lentil and veg curry..




I found this recipe in one of the store magazines and thought I should give t a try.
Here's the recipe.

Heat oil, stir in 1/2 sliced onions and 1 crushed garlic. Cook for 3-4 mins until onion has softened. Stir in 1 tbspn medium curry powder and cook for 1 min. Pour over the 400 ml of veg stock, bring to a boil, than add 100 gms red lentils 200gms cauliflower and 1 large sliced carrot. Cover and simmer for 20 mins, stirring occasionally.
Stir in 75 gms of green beans, cover and simmer for 5 mins, than stir in 3 tbspn og greek style natural yogurt and heat through.
Serve garnished with chopped fresh coriander leaves.
