Fried Rice

This is a one method I use to make fried rice and it comes out very well every time I make it. I had made this the first time after marriage when I was completely a novice to cooking .My mum and obviously me make it as jeera rice ,minus the veggies :)
I also wanted to use up the bell peppers I had lying in my refrigerator so decided to use them in this fried rice.
I made this cooked this soya nuggets to go with the fried rice .I followed the recipe from simpleindianrecipes.com
Ingredients:
1 cup rice,
2 cups water,
1 cup sliced lengthwise, veggies(I used carrot,frozen peas,cauliflower florets,green and yellow peppers),
whole spices-1 bay leaf,1 inch piece cinnamon, 2-3 cloves,3 peppercones.
salt to taste or 1 cube of maggie veg/chicken stock
1 tspn cumin seeds,
1 onion finely chopped,
1 slit green chilly,
soya sauce.

Method:
First heat oil in a vessel, splutter the cumin seeds, add the whole spices, when they crackle add the washed rice and fry for few seconds. Now add the 2 cups of water salt/stock,onion and chilly, stir and bring to a boil than stir once and cover the vessel and cook on slow flame till rice is done .
In a separate pan saute all the veggie together except the bell peppers ,do not over cook the veggies. remove and keep aside . Saute the bell peppers in the same pan, separately. When the rice is cooked mix all the sauteed veggies, add the soya sauce .
The fried rice is ready to be devoured.

variation: 1. cooked/fried chicken pieces can be added.
2. Make an omelet with eggs and tear into pieces and add to the fried rice
